Santa Fe anchors the Sopaipilla tradition through The Shed (since 1953) and Northern New Mexico’s broader Spanish-Indigenous fried-dough lineage. The dish appears at every New Mexican meal across the state.
This list is almost certainly incomplete; Santa Fe holds further hyper-local dishes that have not yet surfaced in the survey.

Sopaipillas — New Mexico (statewide)
Puffy, hollow pillows of fried dough, lighter and airier than Navajo fry bread. Tear open a corner, squeeze honey inside, and watch it soak into the dough. Served alongside nearly every New Mexican meal as a bread substitute. Also served stuffed with beans, carne adovada, cheese, and chile sauce as a complete entrée. The word comes from Spanish “sopaipa” (fried dough). Spanish settlers brought the concept, which fused with Indigenous cooking techniques. “Leaving New Mexico means losing this sweet tradition.
