Modern Forage: Salisbury, MD-DE

RAPA Scrapple in Bridgeville, Delaware (Sussex County, in the Salisbury MD-DE MSA) is the world's largest scrapple producer. Scrapple's footprint covers Delaware, Eastern Pennsylvania, and the Maryland Eastern Shore; it is functionally unknown west of the Appalachians or south of Virginia.

Scrapple is the Pennsylvania-Dutch and broader Mid-Atlantic answer to the same “stretch the meat” problem that produced goetta in Cincinnati and livermush in North Carolina. RAPA Scrapple in Bridgeville, Delaware is the world’s largest producer; the dish circulates across Delaware, the Maryland Eastern Shore, and Eastern Pennsylvania.

This list is almost certainly incomplete; the Salisbury MD-DE MSA and the broader Delmarva Peninsula hold further hyper-local dishes that have not yet surfaced in the survey.

Scrapple — Delaware / Eastern PA / MD

A loaf made from pork trimmings (head, liver, heart), cornmeal, flour, and spices, sliced and pan-fried for breakfast. The Pennsylvania Dutch (German) community’s answer to the same “stretch the meat” problem that produced goetta in Cincinnati and livermush in NC. Delaware’s RAPA Scrapple company is the world’s largest producer. The dish is virtually unknown west of the Appalachians or south of Virginia. People from the region are passionate about it. People from outside the region are often horrified by the ingredient list.
