Modern Forage: Rochester, NY

Nick Tahou Hots in Rochester trademarked 'Garbage Plate' to keep competitors from using the name, leaving them to call their copies 'Rubbish Plate', 'Dumpster Plate', and similar. The proprietary spicy meat sauce ('hot sauce' in Rochester parlance) is the operational lock; the format is everything-on-one-plate Rochester comfort food.

The Garbage Plate is Rochester’s late-night and hangover food, served at Nick Tahou Hots since 1918 and protected by trademark. Competitors copy the format with renamed plates (Rubbish Plate, Dumpster Plate). The dish has never meaningfully escaped Rochester despite decades of food-media coverage.

This list is almost certainly incomplete; Rochester likely holds further hyper-local dishes that have not yet surfaced in the survey.

Garbage Plate — Rochester, NY

A foundation of home fries and/or macaroni salad (or baked beans), topped with your choice of meat (usually two cheeseburger patties or hot dogs), then smothered in a proprietary spicy meat sauce (“hot sauce” in Rochester parlance, not hot pepper sauce), with mustard, onions, and optional ketchup. Created by Alex Tahou at Nick Tahou Hots, established 1918. “Garbage Plate” is a trademarked term. Competitors use names like “Rubbish Plate” or “Dumpster Plate.” The definitive late-night/hangover food of Rochester. Has never meaningfully left the city despite decades of food-media coverage.
