While green chile itself has gotten national attention, the specific institution of the green chile cheeseburger (a standard burger topped with roasted, peeled Hatch or other NM-grown green chiles and cheese) is so embedded in New Mexico culture that the state runs an official Green Chile Cheeseburger Trail. Every gas station, diner, and restaurant has a version. The annual Hatch Chile Festival draws massive crowds. Outside the Southwest, what you get marketed as “green chile” is usually a pale imitation of the real thing.
