Decatur is the home of North Alabama’s white BBQ sauce, a 1920s Big Bob Gibson invention that turned the BBQ-sauce playbook upside down with a mayo-and-vinegar base. The sauce remains North-Alabama-locked despite occasional national food-media coverage.
This list is almost certainly incomplete; Decatur and the Huntsville-Decatur corridor hold further hyper-local dishes that have not yet surfaced in the survey.

White BBQ Sauce — Decatur, AL (North Alabama)
A mayo-vinegar-horseradish-pepper sauce created in the 1920s by Big Bob Gibson, a railroad worker turned pitmaster in Decatur. He dunked entire smoked chickens into vats of it. Still primarily a North Alabama tradition concentrated in the Decatur/Huntsville corridor. Big Bob Gibson Bar-B-Q remains the canonical source (90+ years in operation). The sauce has gained some food-media recognition but remains functionally absent from BBQ restaurants outside Alabama. The national BBQ conversation fixates on KC tomato-based, Texas post oak, NC vinegar, or SC mustard sauces, and most Americans have never heard of a mayo-based BBQ sauce.
