Modern Forage: Boston, MA
The North Shore Roast Beef Three-Way exists at dozens of dedicated roast-beef shops north of Boston (Revere, Salem, Beverly, Peabody, North Andover) and almost nowhere else. The onion roll, James River BBQ sauce, mayo, and white American cheese are the four-element lock; missing any one disqualifies the dish.
The North Shore (north of Boston, including Revere, Salem, Beverly, Peabody, Lynn) holds a dedicated roast-beef-shop ecosystem unlike anything else in New England. Dozens of small shops carry the same canonical preparation, and the “three-way” condiment combination (mayo, white American cheese, James River BBQ sauce on an onion roll) is the rigid format.
This list is almost certainly incomplete; the Boston metro holds further hyper-local dishes that have not yet surfaced in the survey.

North Shore Roast Beef Three-Way — North Shore, MA
Thinly sliced rare roast beef piled on a toasted onion roll with mayo, white American cheese, and a sweet tangy BBQ sauce (James River brand is canonical). The “three-way” means all three condiments. Kelly’s Roast Beef on Revere Beach (1951) started it. Beef left over from a canceled wedding became the signature item. Dozens of dedicated roast beef shops followed: Bill and Bob’s (Salem), Harrison’s (North Andover, since 1975), Nick’s (Beverly), Londi’s (Peabody). “Despite a legion of passionately opinionated fans, it’s little known in the rest of the state.” A 3WAYS brand now sells the sauce commercially. The onion roll is non-negotiable.
